1/4 cup cocoa powder
1 1/4 cup spelt, white or oatmeal
3/4 tsp baking powder
2 tbsps Dutch or extra regular cocoa powder
1/2 tsp baking powder
2/3 cups sugar, unrefined or xylitol, if desired
1/4 tsp – 1/8 teaspoon salt
3/4 cups natural yoghurt, or see the substitution options listed above (I like coconut milk yoghurt)
1 cup finely grated zucchini (220g)
1/3 cup mini or tender chocolate chips, optional
1 tbsp pure vanilla extract
1/4 cup oil, or extra yoghurt for oil-free products
How To Prepare Chocolate Zucchini Bread:
I realize that it easier to grate zucchini by switching them to the pulsed food processor. Although i much prefer the oil version, many readers commented that they had omitted the oil and still liked the results. So i added that you can try at your own risk. I also replaced the oil with cup of softened almond butter, and that was really good too. So you have a choice!
Firstly, Preheat the stove to 350 F. Grease a loaf pan 9-5. Then mix all the dry ingredients in a large bowl. Also add the rest of the ingredients and stir to form a paste. Smooth in the bread pan. Squeeze extra chocolate chips on top if desired. Bake on the central grill for 35 minutes, then (without opening the stove door) leave in the oven closed but off for another 5 minutes. Allow to cool completely, then cover very loosely and refrigerate. If possible, I strongly recommend that you do not taste this product until the next day, as its flavour and texture are much better.
